Yes, I have been thinking about some sort of delay functionality for some time too... It's kind of tricky to do it in a way that is generic enough to fit with the other nodes... I still haven't found the perfect solution.
But there are other ways to achieve what you want, at least to some extent, with a "Sequence". When you trigger the Sequence, it will activate each of it's items, for a equal amount of time, and then stop on the last item, until triggered again.
You could use this feature (the fact that is stays on the last item) to your advantage. If the last item of your list is your "initial behaviour - A" and the first item is the "behaviour that should happen only for a period - B", when you trigger the Sequence, it will output B for a while, and then A (and stay there until you trigger again).
Obviously there are some things to take in consideration, like the fact that you will need to have an initial trigger to set the Sequece to A, and the fact that you will maybe need to find the perfect balance between the duration of the Sequence, and the number of items.
Here's is a very simple example that will blink the eye slowly if you do nothing, and then blink it quickly for 1 second when you touch the Horn (you can trigger it again after 1 second):
And another version, that will blink quickly for 5 seconds (you can trigger it again after 1 second):
